Research Interests

My research Interests focus on the effect of food system sustainability on product and consumer health. Key interests include:

●role of essential dietary micronutrients and fatty acids in maintaining health/preventing disease

●sustainable aquaculture feeding systems and their benefits to human health

●Sustainable dairy farming systems and effects on milk nutrient quality/healthiness

●how seafood farming systems contribute to nutritional status, health, and socio-economic prosperity

●monitoring heavy metals in foods and the risks to consumer health

●assessing micronutrient levels and bioavailability

●role of genetic variability on micronutrient status and health/disease
