Research Interests:

  • Study novel food crops, suitable to grow in Scotland, for Agri- and Dietary biodiversification. Study resilient and environmentally friendly crops like: buckwheat, hemp, potato bean (Apios Americana).
  • Study the nutritional and health impact of novel food crops on humans: macronutrients (protein, fibre, fat) micronutrients, key bioactives bioavailability and metabolism.
  • Understand the crops (dietary metabolites) bioactivity at nutritionally relevant concentrations
  • Translate key nutritional research findings into specialised food formulations/ingredients and novel foods to support dietary needs and achieve a sustainable/balanced diet and promote health
  • Industry focussed research to promote food innovation to: i)to address demand and find solution to reformulate existing foods for better nutritional profile and to meet specific consumer needs; ii)to reduce food and agricultural by products/waste though developing novel foods while contributing to a greener economy and circular nutrition.
